Canning

So much fresh local fruit is available now. Just check out the farm stands. There is an awesome program available through The Southampton Historical Museum. It's the Summer Canning Club, a group that gets together through The East End Home Arts Guild. They will be canning peaches, whole tomatoes, corn relish and making apple butter to can. This is almost a lost art these days and so worth the effort when you are doing it with friends. Call the museum at 283-2494 for more information. I remember my last attempt at canning about dare I say two years ago when I made refrigerator jam. It is actually very easy to do it this way. You can buy a refrigerator jam kit at your larger department stores sometimes or just look into it online. You cook down and strain the fruit you are using. I would suggest berries because they are easier than grapes when you strain them. The great thing is that you are in charge of how much sugar you use but I do like it because it does jell the fruit better. It's a nice activity with kids or friends. The jam doesn't keep all that long in the fridge. Nothing beats the flavor of your own fresh jam on an English Muffin! Go for it and Enjoy!
